Recipe Club: Pumpkin Bread with Streusel Topping

Pumpkin bread is such a good fall treat, and I have to say it is one of my favorites.  I found this recipe a few years ago, and after some modifications, it has been on repeat every fall since.  It provides the perfect combination of soft pumpkin flavor with a sweet, crumbly streusel top.  

Here's what you need.

Pumpkin Bread:
1 cup sugar
1/2 cup oil
2 eggs
1 cup canned pumpkin
1 1/2 cup all purpose flour (I always sift my flour when baking)
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1 teaspoon pumpkin spice

Streusel Topping:
1/2 cup brown sugar
1/3 cup flour
1/4 cup butter
Note: When making this pumpkin bread, I always the double the recipe.  Since you are already in the motion, it is great to have two loaves.  One to eat on right away and another to share or pop in the fridge or freezer for a later date!
 
 Begin by preheating oven to 325 degrees.  Grease and flour one large loaf pan.  In a mixing bowl, beat the sugar and oil until completely blended.  
Add eggs, one at a time, beating thoroughly after each addition.  Beat until all ingredients are incorporated and the mixture is light and fluffy.  Add the pumpkin while on slow speed, and gradually begin adding the dry ingredients.  Mix well.  Pour the mixture into the prepared pan and set aside.
Note: At this point, you can go ahead and bake if you don't want to add the streusel topping.  It is a great recipe with or without the topping, so it is all personal preference!

In a separate bowl, using a pastry cutter or fork, combine the brown sugar, flour and butter combination until it resembles a crumb texture.  Sprinkle the streusel topping evenly over the top of the pumpkin bread.  Bake 55-60 minutes or until the toothpick comes out clean.  Let cool for 10-15 minutes and then remove from pan.

Hello Fall

I love fall.  Although there are perks to all four seasons, fall is my favorite.  The weather, the decor, the warm and welcoming scents and the food are just some of my very favorite things about this beautiful season.  

For us here in western Kansas, we've had some rather warm weather up until last week.  But I'm happy to report that cooler weather is here, and hopefully here to stay!

Here are a few glimpses into our home this time of year.


This weekend our small community is hosting a corn husking event where our nieces and nephews will be enjoying some of the fun.  Before the event starts, we are taking them out to my parent's farm so they can each pick pumpkins.

I plan to make up a few loaves of pumpkin bread later this week for the upcoming weekend, so I'll be sharing my absolute favorite pumpkin bread recipe.  It's perfectly flavored, moist and topped with a sweet, crumbly streusel topping.

Happy Friday!

Hi there!  I'm thoroughly looking forward to the weekend.  The cooler weather has finally set in around here, so it'll be a windows open, fall candle burning kind of weekend.  

This weekend, I also plan to make up some freezer meals for the colder months, along with a couple of loaves of homemade bread.  Nothing is better than having a meal ready to go after a long day of work.  
 
Last weekend we were in Kansas City for one of Chase's cousin's wedding.  Chase has a huge extended family, so it was a fun time getting together with everyone.  It was a beautiful outdoor wedding, and they could not have asked for better weather for their special day.
We, of course, enjoyed some of the best KC BBQ while we were there, spent Saturday morning shopping with my sister-in-laws and Chase and I ended the weekend running around Lawrence for a bit!  It sure brings back memories of a fun four years returning to that beautiful town and campus. #Rockchalk!
Another bonus from last weekend?  We're still enjoying this welcome tin full of cake pops that Chase's aunt and uncle put together for the guests in the hotel!  There are only two left, but it has been such a nice, sweet treat all week.
We celebrated our two year wedding anniversary on Monday with a great meal at home of grilled filet mignon (can't beat farm fresh beef), garlic mashed potatoes, fresh sweet peas and toasted garlic bread.  For a little something sweet, we had brownies (thank you, mom!) topped with a scope of vanilla bean ice cream.
  It's hard to believe that two years has already passed since our wedding day, but what a great two years it has been!

Two Years

I have been a little absent from the blog scene lately.  Life has been busy but wonderful, and today, Chase and I are celebrating our two-year wedding anniversary. 

Here's a peak into our special day. 

I am so lucky to call Chase my husband and my partner in life, and I look forward to a lifetime of more anniversaries with this incredible man.
